Recently I was in a conversation where we were talking about egg coffee, a seemly lost art. Most younger people would look at you with a puzzled expression as to why you would put egg in coffee. At one time, because of the hard water I suppose, an egg would be added to the grounds to make the coffee clear and would take away the bitter taste. My mother made egg coffee until she "got modern" and received a percolator coffee maker, thus ending the lost art.
