Waste not, want not. Our parents and grandparents lived and survived by this rule. Last week the Swenson farm in Chippewa County held it's annual Horse Power Event. It's so wonderful going back in time and really makes you appreciate your life during this day and age.
Although we still love to make lefse, breads, homemade ice cream and etc., we don't have to and can get all this at the store. As for waste not, our forefathers were not as wasteful as we are. They used the cobs of corn to get that extra mile from the corn they grew in the fields.
So, for those of us who feel really thrifty, here is a recipe for corn cob jelly.
Corn Cob Jelly
12 large corn cobs
4 cups of water
1 box powdered fruit pectin
4 cups of sugar
yellow food color
Cut corn kernels from cobs and reserve for another recipe.
In a large pot place corn cobs and water, bring to a boil. Boil for 10 minutes.
Remove and discard cobs, and strain liquid through cheesecloth. Liquid should measure 3 cups. Add more water if necessary. Return to the pot and stir in pectin. Bring to a full rolling boil. Add sugar and bring back to a boil. Skim foam and add a few drops of food coloring, Pour into hot, sterilized jelly jars. Cool and refrigerate until ready to use. Makes about two pints. Enjoy.
Paul Pearson, son Bob of San Jose, California and Mr. and Mrs. Ronald Roghair of Spencer, Iowa visited with June Pearson on Wed. Sept. 16 for the day.
Janet Malo drove to Fairmont to see her sister who is here from Montana. They went to the Chanhassen Dinner Theater and saw Joseph and the Amazing Technicolor Colored Dream Coat. They also went to Waconia with her niece and enjoyed Nickel Dickel Days.
James and Loraye Backer spent Sat. in Montevideo to celebrate the birth of their beautiful new great granddaughter Gracelyn Heidi. She is the daughter of granddaughter Kayla Loraye and Ryen Norman. Another blessing another miracle. She is also the great granddaughter of Jeff Flinn Sr. of Hancock.
Ken and Audrey Evink went to Raymond to visit with sisters and brothers, Mark and Ella Mae Noordmans, Sid Noordmans from Morris, Doris Tensen from Brooten and Greta Van Der Pol from Albuquerque, New Mexico. They are all brothers and sisters who try to get together at least once a year to reminisce and catch up on family news.
