Awhile back, I picked up this cookbook at a Dollar District Store; the name of it is "Atkins is Dead, Pass the Bread". Of course, I had to buy it for only one dollar. I haven't actually tried any of these yet, so I'll just pass a few along that I do plan to try.
Corn, Zucchini and Tomato Pie
3 C. fresh or frozen corn kernels
5 small zucchini, cut into matchstick pieces
2 tsp. salt, divided
1 tsp. pepper, divided
1 T. dill weed
2 T. butter, melted
3-4 small tomatoes, cut into 1/2" slices
1/2 C. grated Parmesan cheese
1/4 C. dry bread crumbs
2 T. olive oil
Preheat oven to 375 degrees. In a 9x13 inch glass baking dish, combine corn, zucchini pieces, 1 tsp. salt, 1/2 tsp. pepper, dillweed and melted butter. Toss until vegetables are thoroughly coated and spread evenly. Cover with tomato slices. Sprinkle tomato slices with remaining salt and pepper. In a small bowl, combine grated Parmesan cheese and dry bread crumbs. Sprinkle bread crumbs mixture over tomatoes and drizzle casserole with olive oil. Bake for 30 minutes, until cheese is bubbly. Remove from oven and let stand 5 minutes before serving.
12 medium tomatoes, cored and quartered
1/2 C. water
1/3 C. coarsely chopped onions
2 stalks celery, coarsely chopped
1 tsp. fresh minced parsley
1 bay leaf
1 1/4 tsp. salt
14 tsp. paprika
1/4 tsp. sugar
In a Dutch oven over medium heat, bring quartered tomatoes, water, onions, celery, parsley and bay leaf to a boil. Reduce heat, cover and let simmer for 30 minutes. Remove from heat. Pour mixture through a colander or sieve to remove vegetables. Add salt, paprika and sugar and mix well. Place mixture in refrigerator until chilled. If desired, serve tomato juice over ice.
The mystery of the recipe for the old Del Monico chicken and dumpling soup is solved; there actually isn't a recipe. Delores Braun invited me over for coffee and rolls and we talked about it. It was pretty much made b'guess and b'gosh until it tasted just right. Thanks, Delores!
Mexican Cream Cheese Roll-Ups
1 (8 oz.) pkg. cream cheese, softened
1/3 C. mayonnaise
2/3 C. chopped green olives
1 small can chopped black olives, drained
6 green onions, chopped
8 (10 inch) flour tortillas
1/2 C. salsa
In a medium bowl, combine cream cheese, mayonnaise, olives and chopped green onions. Spread mixture in a thin layer onto each tortilla. Roll up tortillas. Chill in refrigerator for about 1 hour, until filling is firm. Slice tortillas into 1" rolls. If necessary, secure with toothpicks. Serve with salsa for dipping.
Easy Ranch Beans
1/4 C. chopped green pepper
1 3/4 C. canned baked beans
1 3/4 C. canned red kidney beans, drained and rinsed
2 T. ketchup
2 T. molasses
1/2 tsp. onion powder
In a large saucepan over medium high heat, combine all ingredients. Mix well and cook for about 10 minutes or until heated through.
Two elderly sisters donated $5 to a charity and, to their surprise, won tickets to a Vikings football game. Since they had never seen a live football game before, Madge thought the free tickets would provide an excellent opportunity for doing so. "I think so, too," said Mabel. "Let's go!"
They soon found themselves high in a noisy stadium, overlooking a large, grassy expanse. They watched the kickoff and the seemingly endless back-and-forth struggles that comprised the scoreless first half. They enjoyed the halftime entertainment that followed. Then came the second half. When the teams lined up for the second-half kickoff, Madge nudged her sister.
"I guess we can go home now, Mabel," she said. "This is where we came in."
