I've come across these recipes from various church cookbooks, and they all look great to me, and they're ready to eat in about 30-35 minutes- my kind of food! The next couple of weeks, I'll try to concentrate on Christmas recipes.


Country Fried Steak with Milk Gravy

4 (4 oz.) cube steaks

1/2 tsp. salt, divided

1 3/4 tsps. black pepper, divided

1 C. flour

2 eggs, lightly beaten

1/4 C. lard (I haven't bought lard for years)

1 C. milk

Season meat with 1/4 tsp. of the salt and 1/4 tsp. of the pepper; set aside. In a shallow dish, mix flour with 1 tsp. of the pepper. Dredge each steak in flour. Dip in beaten egg, then dredge in flour again. Heat lard in a large, heavy skillet over medium-high heat. Fry steaks 3-4 minutes on each side, or until golden brown. Drain on paper towels. Pour off all but 2 T. of the fat. Sprinkle 2 T. of the dredging flour into oil. Cook over medium heat for 1 minute, scraping up any browned bits from bottom of the skillet. Gradually whisk in milk. Cook, stirring frequently, 3-4 minutes, or until thickened and bubbly. Add 1/4 tsp. salt and 1/4-1/2 tsps. pepper; gravy should be quite peppery.

Maxine says: Experts say you can relieve stress by petting a cat. "Course, it doesn't work if the cat's the one makin' you nuts in the first place.

Omelet Biscuit Cups

1 (12 oz.) pkg. large refrigerated buttermilk biscuits

4 eggs

1/4 C. milk

1/8 tsp. salt

1/8 tsp. pepper

1 C. diced, fully cooked ham

3/4 C. shredded Cheddar cheese, divided

1/3 C. chopped canned mushrooms

1 T. butter or margarine

Press biscuits onto bottom and up the sides of greased muffin cups; set aside. In a large bowl, beat the eggs, milk, salt and pepper. Add ham, 1/4 cup cheese and mushrooms; mix well. In a skillet, melt butter, add the egg mixture. Cook and stir until eggs are nearly set. Spoon into biscuit cups. Bake at 375° for 10-15 minutes or until biscuits are golden brown. Sprinkle with remaining cheese. Bake 2 minutes longer or until cheese is melted.

Easy Stroganoff

1 (16 oz.) pkg. wide egg noodles

1 lb. lean ground beef

1 T. Worcestershire sauce

1 tsp. seasoned salt

1 tsp. minced garlic

1 (8 oz.) can sliced mushrooms

2 cans Cream of Mushroom soup

1 soup can milk

1 C. sour cream

In a large, heavy skillet, brown ground beef with Worcestershire sauce, seasoning salt, and garlic. Drain well; set aside. Cook noodles in a large pot of boiling water until done. Drain. Return noodles to pot. Gently stir in ground beef, mushrooms, soup and milk. Place the pan over low heat, and heat through. Stir in sour cream; serve immediately.

Why Eve was Created:

Finally, the #1 reason why God Created Eve:

When God finished the creation of Adam, He stepped back, scratched his head, and said, "I can do better than that."
