Phyllis' Fixins'

For the next couple of weeks, I'll concentrate on making Christmas goodies; it's always a risk to bake anything too soon or it will be gone by the holidays. The first one comes from Julette Jergenson. It sounds delicious; I'll write it as you sent it.

Plum Pudding

Dissolve 1 small box lemon Jell-o in 2 cups boiling water- add 3/4 cup Grape Nuts, 3/4 cup raisins, 3/4 cup cooked prunes, and 3/4 cup walnut pieces. Add 1/4 tsp. of the following: cinnamon, ginger, cloves and nutmeg. Add all together; pour into a greased mold and set in refrigerator. To serve, unmold on platter and garnish with whipped cream or Cool Whip. Decorate with sliced kiwi, orange sections, etc. Sounds good!

Mincemeat Cookies

1 1/2 C. packed brown sugar

1 C. shortening

1 egg

2 C. prepared mincemeat pie filling

3 1/4 C. flour

1/4 tsp. salt

1 1/2 tsp. baking soda

Preheat oven to 425°. Cream together brown sugar and shortening. Add in egg and mincemeat and mix well. Sift together flour, salt and baking soda; stir into mincemeat mixture. Drop onto cookie sheet and bake 7-10 minutes.

Frosting:

1 1/2 C. packed brown sugar

3/4 C. butter, cubed

1 C. powdered sugar

6 T. half-and-half

1 tsp. rum extract

Pecan halves

Combine the brown sugar and butter in a saucepan; bring to a boil over medium heat. Boil for 6-8 minutes, stirring twice, or until the sugar is dissolved. Remove from the heat. Add the powdered sugar, cream and extract; beat until smooth. Frost the cookies and top with a pecan half.

Quick Fruitcake

1 (16 oz.) pkg. cranberry or blueberry quick bread mix

1/2 C. chopped pecans

1/2 C. raisins or dates

1/4 C. chopped maraschino cherries

1/4 C. crushed pineapple, drained

Prepare quick bread batter according to package directions; stir in the remaining ingredients. Pour into greased 9x5x3 inch loaf pan. Bake at 350 degrees for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Microwave Peanut Brittle

1 1/2 C. dry roasted peanuts

1 C. white sugar

1/2 C. light corn syrup

1 pinch salt (optional)

1 T. butter

1 tsp. vanilla

1 tsp. baking soda

Grease a baking sheet; set aside. In a glass bowl, combine peanuts, sugar, syrup, and salt. Cook in microwave for 6-7 minutes on High (700 watt); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2-3 minutes longer. Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool 15 minutes, or until set. Break into pieces, and store in an airtight container.

Father George was opening his Christmas cards one December morning. Out of one of the cards came a single sheet of paper; on it was written only one word: "Fool". The following Sunday, in church, Father George announced to the congregation, "I have known many people who have written notes to me and forgotten to sign their names. But, this week, I received a note from someone who signed his name and had forgotten to write a letter."
