As I've said before, I collect recipes from all over the place and get ideas for recipes from many things. I had lunch from Meals on Wheels one day and had meat loaf--it was good! So... I started looking for some "different" meat loaf recipes. The one I picked sounds pretty interesting.

Cottage Cheese Meat Loaf

1 C. small curd cottage cheese

1 egg, lightly beaten

1/4 C. ketchup

2 T. chopped onion

1 T. prepared mustard

1/2 C. quick-cooking oats

1 tsp. salt

1/8 tsp. pepper

1 lb. lean ground beef

1/3 C. grated Parmesan cheese

In a bowl, combine the first 8 ingredients. Add beef and mix well. Press into an ungreased 8-inch square baking pan. Bake at 350° for 20 minutes. Sprinkle with Parmesan cheese; bake 10-15 minutes longer or until meat is no longer pink. Drain; let stand 10 minutes before cutting.

Ranch-Style Pork Burgers

1/2 lb. ground pork

1 T. ranch salad dressing mix

1 tsp. dried minced onion

1/4 tsp. pepper

2 slices Swiss cheese

2 hamburger buns, split

Lettuce leaves and tomato slices, optional

In a small bowl, combine the pork, dressing mix, onion and pepper. Shape into 2 patties. Grill, uncovered, over medium heat for 7-8 minutes on each side or until a meat thermometer reads 160°. Top each patty with a cheese slice; cover and grill just until cheese begins to melt. Serve on buns, with lettuce and tomato if desired. 2 servings.

Make a stick of cold butter spreadable by "shaving" slices of it with a vegetable peeler. The thin butter ribbon will quickly turn soft and won't tear holes in soft bread.

Pineapple-Orange Cranberry Sauce (I saw this recipe on a calendar- sounds good as a side dish)

1 can (16 oz.) whole-berry

cranberry sauce

1 can (11 oz.) mandarin oranges,

well drained

1 can (8 oz.) crushed pineapple,

well drained

1/4 C. chopped pecans, toasted

In a small serving bowl, combine the cranberry sauce, oranges and pineapple. Stir in pecans just before serving. Refrigerate leftovers. Makes 2 3/4 cups.

Chess Cake (A very rich cake)

1 pkg. yellow cake mix

2 eggs

1/2 C. butter, melted

1 (8 oz.) pkg. cream cheese, softened

1/2 C. butter, melted

2 eggs

4 C. powdered sugar

Preheat oven to 325°. Grease and flour one 9x13 inch pan. In a large bowl, mix together cake mix, 2 eggs and 1/2 cup melted butter. Put into prepared pan. In another bowl, beat cream cheese until smooth. Blend in 1/2 cup melted butter and 2 eggs. Gradually beat in the powdered sugar. Pour over the crust mixture already in the pan. Bake for 1 hour in preheated oven. Cool.

OK, one joke! A group of 40 year-old guys discuss where they should meet for dinner. Finally, they agree to meet at Mario's Restaurant because the waitresses are cute and friendly.

10 years later, at age 50, the group agrees to meet at Mario's because the food is good and the wine selection is excellent.

10 years later, at age 60, the group agrees to meet at Mario's because they can eat there in peace and quiet and the restaurant is smoke-free.

10 years later, at age 70, the group agrees to meet at Mario's because the restaurant is wheel chair accessible and they have an elevator.

10 years later, at age 80, the group agrees to meet at Mario's because they have never been there before!

Sounds like my mind, too.
