Having had no brilliant ideas this week, I started looking through some cookbooks and came up with several kinds of breads. By the way, thank you to all for sending thoughts and prayers for me through this cancer thing- the cards have just been great! Thank you again and again.


Simple Focaccia Bread

1 (6 oz.) can tomato paste

1 T. honey

1 tsp. dried basil

1 T. Italian seasoning

1 (1 lb.) loaf frozen bread dough, thawed

2 T. olive oil

1 T. Parmesan cheese

Preheat oven to 375°. Lightly grease a medium baking sheet. In a bowl, blend the tomato paste, honey and basil. Knead the Italian seasoning into the frozen bread dough, and roll into a 12-inch circle on the prepared baking sheet. With a fork, poke holes in the surface of the dough. Drizzle with olive oil. Brush with the tomato paste mixture. Sprinkle with Parmesan cheese. Bake 30 minutes in the preheated oven, until the bread is lightly browned.

Hobo Bread

1 C. raisins

1 C. golden raisins

4 tsps. baking soda

2 C. boiling water

4 C. flour

2 C. sugar

1/2 tsp. salt

1/4 C. oil

Place the dark and golden raisins in a medium bowl. Dissolve baking soda in boiling water, and pour over raisins. Let stand overnight without stirring. Preheat oven to 350°. Grease three 1 lb. sized coffee cans. In a large bowl, stir together the flour, sugar and salt. Stir in the raisins with their water, and the oil until well blended. Batter will be thick. Divide the batter evenly between the 3 cans. Bake for 1 hour in the preheated oven, or until a toothpick inserted into the crown comes out clean. Lay cans on their side to loosen the bread as it cools.

The hardness of the butter is directly proportionate to the softness of the bread. Also, your joints are more accurate than the National Weather Service. I know this one's true!

Sweet Buttermilk Wheat bread

2 C. flour

4 C. whole wheat flour

1 C. white sugar

2 tsps. salt

4 tsps. baking soda

4 C. buttermilk

Preheat oven to 350°. Lightly grease two 9x5 inch loaf pans. In a large bowl, stir together flour, whole wheat flour, sugar and salt. In a separate bowl, dissolve baking soda in buttermilk. Stir buttermilk into flour mixture. Beat well. Pour batter into prepared pans. Bake in preheated oven for one hour.

Mayonnaise Biscuits

2 C. self-rising flour

1 C. milk

6 T. mayonnaise

Preheat oven to 400°. In a large bowl, stir together flour, milk and mayonnaise until just blended. Drop by spoonfuls onto lightly greased baking sheets. Bake for 12 minutes in the preheated oven, or until golden brown.

An elderly Floridian called 911 on her cell phone to report that her car had been broken into. She is hysterical as she explains her situation to the dispatcher. "They've stolen the stereo, the steering wheel, the brake pedal and even the accelerator!" she cried. The dispatcher said, "Stay calm. An officer is on the way."

A few minutes later, the officer radios in "Disregard", he says. "She got into the back seat by mistake!"
