This week I thought I'd include some egg dishes; my daughter got me this cookbook, "365 20-Minute Recipes", covering all sorts of dishes to try. Give me fast and easy recipes anytime. Being "laid up" lately, I've nothing to do but look through cookbooks.

Eggs Scrambled with Chives and Cheddar Cheese

12 Eggs

1/3 C. milk

2 tsps. grainy Dijon mustard

2 T. butter

2 C. grated sharp Cheddar cheese

3 T. minced chives or minced scallion tops

1/4 tsp. pepper

In a large bowl, whisk eggs with milk and mustard until blended. In a large nonstick skillet, heat butter. Add eggs and cook over low heat, stirring almost constantly, until eggs have formed a creamy mass and are just barely set, but still moist, about 5-7 minutes. Sprinkle cheese, chives, and pepper over scramble eggs and serve at once.

Campfire Eggs

A favorite with children

2 T. butter, softened

4 sliced whole wheat bread

4 slices ham

4 eggs

Heat a griddle or large nonstick skillet over medium-high heat. Butter 1 side of bread. Top unbuttered side with a slice of ham. Using a 3 1/2 inch round cookie cutter, press out a circle or other shape of bread in the bread and ham. Set buttered side down on hot griddle. One at a time, bread eggs into a shallow bowl and gently slide one into each hole. Using a large spatula, flip bread over to warm and cook yolk to desired consistency. Serve at once.

Creamed Eggs on Toast

2 T. butter

3 small shallots, minced

2 T. flour

1 1/4 C. milk

1/2 C. heavy cream

4 hard-boiled eggs, peeled and chopped

2 T. chopped parsley

1 T. fresh basil, slivered

1/4 tsp. salt

1/2 tsp. white pepper

2 English muffins, split and toasted

In a large nonstick skillet, melt butter over medium heat. Add shallots and cook until just soft, about 2 minutes. Add flour to skillet and cook, stirring, 1 minute. Add milk and cream and bring to a boil, whisking until sauce begins to thicken, 1-2 minutes. Gently stir in eggs, parsley, basil, salt and pepper. Spoon over toasted English muffins and serve while hot.

Denver Omelet

1 1/2 T. butter

1/2 C. chopped onion

1/2 C. chopped green bell pepper

1/2 C. diced smoked or baked ham

3 eggs

1/8 tsp. cayenne

In a large nonstick skillet, heat butter. Add onion, green pepper and ham and cook over medium heat, stirring occasionally, until vegetables are softened and ham is lightly browned, about 5 minutes. Meanwhile, whisk eggs with cayenne and 2 T. water. Reduce heat to low, pour eggs over vegetables and stir gently to combine. Cook uncovered, until bottom is lightly golden. With a large spatula, turn eggs over and cook until pale golden on other side, 1-2 minutes. Center should remain moist. Divide in half to make 2 servings.
