We're finally experiencing some warmer summer weather. With the hotter weather cooking, we don't like to heat up our ovens and/or stovetops, but rely more on slow cookers and microwaves. I have this cookbook called "Fix it and Forget it", and contains all slow cooker recipes. So, this week, I'll pass some of those along.

Shipwreck

1 lb. ground beef, browned

4-5 potatoes, cut in French fry-like strips

1-2 onions, chopped

16 oz. can light red kidney beans, drained

1/4 lb. Velveeta cheese, cubed

10 3/4 oz. can tomato soup

1 1/2 tsp. salt

1/4 tsp. pepper

butter

Layer in slow cooker in this order: ground beef, potatoes, onions, kidney beans, cheese. Pour soup over top. Season with salt and pepper; dot with butter. Cover; cook on low 6-8 hours. May sprinkle with Parmesan cheese at the table.

Slow Cooker Pizza

1 1/2 lbs. ground beef or bulk Italian sausage

1 medium onion, chopped

1 green pepper, chopped

half box rigatoni, cooked

7 oz. jar sliced mushrooms, drained

3 oz. sliced pepperoni

16 oz. jar pizza sauce

10 oz. mozzarella cheese, shredded

10 oz. cheddar cheese, shredded

Brown ground beef (or sausage) and onions in saucepan; drain. Layer half of each of the following, in the order given, in slow cooker: meat and onions, green pepper, noodles, mushrooms, pepperoni, pizza sauce, cheddar cheese, and mozzarella cheese. Repeat layers. Cover; Cook on low 3-4 hours. Note: Keep rigatoni covered with sauce, so they don't become dry and crunchy.

With all the sadness and trauma going on in the world at the moment, it's worth reflecting on the death of a very important person, which almost went unnoticed, awhile back. Larry LaPrise, the man who wrote "The Hokie Pokey" died peacefully at the age of 93. The most traumatic part for his family was getting him into the coffin. They put his left leg in- and then the trouble started! (Not everyone will get this one).

Cranberry Chicken

3-4 lbs. chicken pieces

1/2 tsp. salt

1/4 tsp. pepper

1/2 C. diced celery

1/2 C. diced onions

16 oz. can whole berry cranberry sauce

1 C. barbecue sauce

Combine all ingredients in slow cooker. Cover; bake on high for 4 hours, or on low 6-8 hours. Makes 6-8 servings.

Slow Cooker Cottage Potatoes

2 lbs. frozen hash brown potatoes

1 pint sour cream

10 3/4 oz. can Cream of Chicken soup

dash of pepper

2 C. Velveeta cheese, cubed

1/2 C. chopped onions

3/4 tsp. salt

1/4 tsp. pepper

Combine all ingredients, except potatoes, in large bowl. Then, fold in potatoes; spoon into slow cooker.

Cover. Cook on high 1 1/2 hours, and then on low for 2 1/2 hours. Makes a lot.

A pastor of a church is sitting in his office, when the phone rings. "Hello, is this Father Jones?" the caller asks. "It is," replied the pastor.
