Last week I did a column on pumpkin recipes, so I thought this week, I'd gather some recipes using squash, another great fall favorite. I'm actually partial to the buttercup variety.

Mallow-Pecan Acorn Squash

1 medium acorn squash, halved and seeded

1/2 C. crushed saltines

1/4 C. chopped pecans

1/4 C. packed brown sugar

3 T. melted butter or margarine, divided (optional)

1/8 tsp. nutmeg

1 C. miniature marshmallows

Place squash cut side up in an ungreased 9x13 inch baking dish. In a bowl, combine the cracker crumbs, pecans, brown sugar, 2 T. butter and nutmeg. Spoon into squash. Brush edges of squash with remaining butter. Cover and bake at 400 degrees for 55-60 minutes, or until squash is tender. Sprinkle with marshmallows. Bake, uncovered, for 3-5 minutes, or until golden brown.

Indian Squash

1 large winter squash

1/2 tsp. salt

2 tsp. sugar

3 T. soft butter

1 1/2 tsp. water

3 T. light or dark molasses

Cook halved and seeded squash in salt water for about 20 minutes. Place halves in baking dish. Make mixture of other ingredients, fill squash and bake in a 350 degree oven until tender.

Golden Baked Acorn Squash

2 acorn squash, halved and seeded

3 T. butter, divided

3 T. brown sugar

3 T. frozen orange juice concentrate, thawed

3 T. brandy

Preheat oven to 350 degrees. Melt 1 T. butter in a 9x13 inch baking dish. Coat pan evenly with the melted butter. In a sauce pan, mix the remaining butter, brown sugar, orange juice concentrate, and brandy. Bring to a boil; remove from heat. Place squash halves cut side down in the baking dish; bake 30 minutes, or until easily pierced with a knife. Turn squash over, and drizzle with the sauce. Continue baking 15 minutes. Cool slightly before serving.

Honey and Spice Acorn Squash

4 medium acorn squash

1/3 C. honey

1/4 C. butter or margarine, melted

1/2 tsp. salt

1/4 tsp. cinnamon

1/4 tsp. ginger

In a bowl, combine the honey, butter, salt, cinnamon and ginger. Cut squash in half; discard the seeds. Fill squash halves with butter mixture. Place in a greased 10x15 inch baking pan. Cover and bake at 375 degrees for 1 hour, or until squash is tender. Uncover; bake 10 minutes more. Serve four squash halves. Drain and discard butter mixture from remaining squash; mash. Refrigerate for another use, or just serve all the squash halves.

Sven and Ole were looking at a Sears catalog and admiring the models. One says to the other, "Have you seen the beautiful girls in this catalog, then?" The second one replies, "Ya, they are very beautiful. And look at the price!" The first one says, with wide eyes, "Wow, they aren't very expensive, then. At this price, I'm buying one." The second one smiles and pats him on the back. "Gut idea! Order one and if she's as beautiful as she is in the catalog, I will get one, too." Three weeks later, the young man asks his friend, "Did you ever receive the girl you ordered from the Sears catalog?" The second man replies, "No, but it shouldn't be long now. I got her clothes yesterday!"
