Last week I did a column on pumpkin recipes, so I thought this week, I'd gather some recipes using squash, another great fall favorite. I'm actually partial to the buttercup variety.


Mallow-Pecan Acorn Squash

1 medium acorn squash, halved and seeded

1/2 C. crushed saltines

1/4 C. chopped pecans

1/4 C. packed brown sugar

3 T. melted butter or margarine, divided (optional)

1/8 tsp. nutmeg

1 C. miniature marshmallows
